Our stainless-steel knives are made of Japan’s advanced technology, premium
quality 420J2 stainless steel. This stainless steel has a high content of carbon
and other high-performance alloys, which provides superior resistance to both
corrosion and abrasion, as well as longer edge retention. This allows you to
enjoy knives that stay sharper for much longer.

420J2
The chemical composition of the 420J2 is a mixture of high Chromium, which makes it stainless steel with high corrosion resistance.
- 0,32% of Carbon: It improves hardness and wear/corrosion resistance, but a high
amount of it decreases strength.
- 14% of Chromium: For tensile strength and Edge retention and enhances corrosion
resistance and wear resistance.
- 1% Nickel: Improves toughness.
- 1% of Manganese: Increases hardness and brittleness.
- 1% Silicon: Improves Strength.
- 0,04% of Phosphorus: Increases strength.
- 0,03% of Sulfur: Increases machinability.
The maximum hardness of the 420J2 steel is 56 HRC (Rockwell Hardness).
