Another exciting limited edition release from London's Bimber Distillery! This is its Peated Cask expression, initially matured in first-fill bourbon barrels before a finish in quarter casks which previously held a peated Islay single malt! A brilliant balance of creamy bourbon influence and maritime smokiness, just 1,750 bottles were released at 54.1% ABV.

The Bimber Peated Cask Batch No.1 was stored in fresh bourbon barrels. The whisky was then finished in former quarter casks that previously contained peated whisky from the island of Islay. On July 30, 2020, the whisky was bottled in an edition of 1,750 bottles and a strength of 54.1% ABV without chill filtration and in natural colour.

Tasting Notes

Nose : crisp, clean notes of fresh peaches, toffee and custard, with floral notes of juniper, a hint of smoke and tobacco leaves

Palate : powerful start with a rich and oily mouthfeel, stone fruits and lemon zest paired with butter biscuits, charcoal and medicinal peat smoke

Finish : A dry finish of last bonfire smoke and peppery spices.

About Bimber

Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.

The journey begins at their single farm, where 100% of their barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in their wooden washbacks that were hand-made at their own cooperage. Bimber uses direct fire to heat the small copper pot stills, and matures the spirit in hand-selected casks. The whisky is also bottled on site.

Their hand-crafted approach to whisky production passionately combines traditional methods, expertise and commitment to quality.

Bimber’s first casks were laid down on the 26th May 2016 and they released their inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with their trademark accessible, fruit forward character.
